I would like to learn about the whole breadth and depth of the company, but I wonder whether it would be appropriate to cold-request a chat.

During my summer internship we had sessions with various partners which enabled us to hear their different stories and experiences. Off the back of these meetings, it is possible to network further and politely ask for follow up chats. I'm sure partners would be open to it if they have the time :)
