You are actually required to do a certain amount of learning in the annual year (not just you but all EY employees)!
Your utilization is normally expected to be around 60%
So as long as you are on projects 60% of the time, you should be fine
You are also compared to your cohort's utilization percentage
I do think you should try your best to get as much project experience as possible! But if you do have free time, then you can do the above :)
