Hello - the 20hr restriction applies to term time only, so internships taking place over the summer holidays will not be affected. If you choose to work on a dissertation alongside taking on an internship, then this will be for you to manage in your own time as long as it doesn't impact your work, but should not be impacted by the time restrictions on VISAs.
